Can you obtain position 1 and 5 with it set to position 3 and turn volume to zero on 1 pickup or are positions 1 and 5 a cleaner sound or more power?

Yes, you can get the single humbucker like position 1 and 5 - on position 3 with one corresponding volume turned to zero. That is one way to get there. Position 3 can be used to blend the tone with the 2 volumes, where as you're working with one volume on 1 and 5. No designed difference in output, etc....

I assume it's a coil tap, not a coil split, correct?

Coil Tapping is usually only done on Single Coil Pups. Tapping off between the 2 wires on a coil. These are Coil Split, seperating the coils from the humbucking config by isolating each coil.
